Pesto & Tuna Rainbow Orzo Salad

Serving Size: 4-6

1 lb. Pappardelle’s Rainbow Orzo
1 (7 oz.) container Pappardelle’s Traditional Basil Pesto
2 (6 oz.) cans water-packed tuna, drained
Juice of 1 lemon
1 bunch scallions, chopped
1 pint cherry tomatoes, halved
1 avocado, cubed (optional)
Sea salt
Freshly ground black pepper

Cook pasta in a pot of boiling salted water until al dente (about 8-10 minutes). Drain.
In a large bowl, add pesto, lemon juice, scallions, cherry tomatoes and orzo. If desired, stir in cubed avocado. Season with sea salt and pepper.
