Spicy Crab Orzo Salad

Telluride Brewing Co's Bridal Veil Rye Pale Ale is a terrific companion to this Spicy Crab Orzo Salad, with the fruity hoppiness of the beer cutting through the heat of the pasta and richness of the crab.

Ingredients: 

8 oz. Spicy Red Hot Thai Curry Orzo
2 red bell peppers, diced
6 scallions, minced
12 oz. lump crab meat
juice of 1/2 lime
2 tablespoons creme fraiche, more if desired

Instructions: 

1. Bring a pot of salted water to boil. Add orzo and cook until al dente, stirring occasionally.

2. Meanwhile, melt a pat of butter in a saute pan over medium-low heat; add red peppers and scallions and cook until soft and fragrant. 

3. Add crab and cook until heated through. Add orzo, lime juice, creme fraiche, and a ladle of pasta water and stir to combine, adding more lime, creme fraiche, and pasta water if desired. Can be served warm or cold.
