Pesto & Tuna Rainbow Orzo Salad

Ingredients: 
  • 1 lb. Pappardelle’s Rainbow Orzo
  • 1 (7 oz.) container Pappardelle’s Traditional Basil Pesto
  • 2 (6 oz.) cans water-packed tuna, drained
  • Juice of 1 lemon
  • 1 bunch scallions, chopped
  • 1 pint cherry tomatoes, halved
  • 1 avocado, cubed (optional)
  • Sea salt
  • Freshly ground black pepper
Instructions: 
  1. Cook pasta in a pot of boiling salted water until al dente (about 8-10 minutes). Drain.
  2. In a large bowl, add pesto, lemon juice, scallions, cherry tomatoes and orzo. If desired, stir in cubed avocado. Season with sea salt and pepper.
