And why are they so special? It starts with recipes that call for gourmet combinations of fillings and doughs. We are extremely proud that our fillings are hand-prepared in small batches by the same "Matron of the Kitchen” (she prefers to remain anonymous, but we know her as Danette) who has been in charge for over 14 years and was personally trained by our creative co-founder, David Bowen. She hand chops, grinds and cooks our fillings to ensure each and every batch fills our pasta pockets with a rich, chunky texture. You'll find real pieces in our ravioli, not puréed "babyfood" as with most store-bought ravioli.  

Our artisan dough craftspeople transfer the small filling batches into our pasta using gravity fed Italian equipment that allows us to switch adroitly between different dough combinations and to monitor each step to achieve pasta perfection. In rows of 2x2, just like they’re descending off of Noah’s Ark, the ravioli come out as our artisans catch each grouping of ravioli and carefully watch to make sure the portions and seams of each pocket are just right.
