Did you know that most shaped pastas available today are created through a process called extrusion? With this process, the pasta dough is forced, or extruded, through a die to create the desired shape - like a giant playgdough machine. Mass produced pastas are extruded through common Teflon dies, which results in a very silky noodle that lacks mouth texture. True to our traditional Italian roots, we use Bronze dies. And we make larger noodles than average. Pasta dough labors to get through those, and the extra effort results in a coarser noodle that feels more luxurious on the tongue, does a better job of gripping sauce and creates a bountiful plate presentation. By infusing our dough with generous amounts of vegetables, fruits, herbs and spices, we also put a lot of added torque, or pressure, on our Italian pasta machines. To make our pasta work, we've had to completely re-engineer our equipment so much the Italians would barely recognize their creations. (Yes, we've burned out many motors and snapped quite a few parts in the process!)

Another fun fact: Like fine wine, we age our shaped pasta in barrels. First, we slow-dry it for 2-4 days in our special drying chambers. Next, we "rest" it for about one month in barrels for the ultimate product integrity.
