Did you know Italians traditionally hung their long-cut pasta on clotheslines, to slow-dry in the gentle Mediterranean breeze? That's how Pappardelle's flat-cut pastas are dried. For 2-4 days, our pastas gently wave to and fro in specially designed chambers as we slowly tease out the water for the perfect dry! Like Grandma standing guard with her broom, taking a swing at the first bird that threatened her clothesline pasta, we keep our drying rooms under lock and key. In fact, we call our drying room hall, “Cell Block C.” Come take our tour and you'll see why.

To give you a comparison, mass produced pastas are flash dried at high temperatures over a few hour period and typically use inferior flour. During this process, the pasta loses a lot of its nutritional value, flavor and vibrancy.
