David Bowen, Pappardelle’s cofounders, originally created this sauce to pay homage to Chimayo, New Mexcio, a small town north of Santa Fe that is known for growing some of the tastiest chiles in the world. When our team first tasted this sauce, we were in love and it instantly became an in-house favorite.
